FRIDAY DINNER
Option #1
A plated dinner of smoked chicken, sliced brisket, St. Louis style ribs, peas & pancetta, candied sweet potatoes
Option #2
Moroccan Stew with Falafel – stewed chickpeas, potatoes, tomatoes, carrots and red curry topped with pickled onions, chimichurri, goat Cheese and fresh cilantro and falafel

SATURDAY BREAKFAST
Saturday’s breakfast buffet will include items for those who choose to eat meat as well as for those who choose not to eat meat including: Scrambled eggs and bacon; Fresh cut fruit; Vanilla yogurt and granola; English muffins; Coffee, tea, milk, juice

Consider choosing vegetarian / plant-based meals

AIA Minnesota is implementing the JUST program which is administrated by the International Living Future Institute. The JUST program calls for organizations to develop policies, programs, and practices that support the humane, compassionate treatment of all animals, including making plant-based food options available for catered events. This approach is also consistent with the AIA’s priority on climate focused action; eating plant-based meals can play a significant role in limiting the effects of climate change. In support of this, we encourage you to consider choosing the vegetarian option for Friday’s dinner, Saturday’s breakfast, and/or the optional Saturday lunch.
